Air Fryer Stuffed Pickles
This was something new that I saw on social media and decided I would give a try to. I wasn't real sure what I would actually think of it but was pleasantly surprised by the outcome!
I began with a jar of whole pickles just in case I destroyed some in the process of learning about how to do this. I cut these pickles in half and then attempted to make a "boat" out of the pickle. Unfortunately, I wasn't very handy at this but my mom was around to help me out. I'll keep practicing until I get it down though. I did destroy a couple in the process though.
Once we had 6 pickles halved and turned into boats we decided that would be good for what we were doing initially.
The information below is enough to stuff 6-8 whole pickles.
Ingredients:
Whole Pickles (Dill)
2 blocks cream cheese (8oz blocks)
1.5-2 cups shredded cheddar cheese
1/2 package of bacon (or you can use bacon bits - I'm a snob and like fresh bacon)
1 ranch mix packet
Instructions:
Cook bacon as desired to make "bacon bits".
Cut pickles in half and then scoop out the inside (or cut) to make a "boat" to hold the stuffing. Lay pickle boats on a paper towel or plate to "drain".
Once the bacon is cooled, then cut into small pieces or "bits".
Pat the pickle boats dry with a paper towel.
In a large mixing bowl, add cream cheese (if it's not soft, go ahead and soften in the microwave for 30-45 seconds), Bacon Bits, Shredded Cheddar, and Ranch packet and mix together well.
Stuff the pickle boats with the mixture (I was generous with my stuffing).
Air Fry the stuffed pickles for 8 minutes at 400 degrees.
Let cool, then serve with ranch dip!
