Salsa Chicken
Crockpot Salsa Chicken has become one of my favorite recipes to be able to share with others! I got to introduce it to my "football family" recently (my friends that I watch college football with) and they loved it!
Crockpot Salsa Chicken is, obviously, made in the crockpot. This recipe can feed 3-5 people depending on the size of the chicken breast used.
Ingredients:
Chicken Breast (3 boneless skinless)
Salsa (1-2 jars)
Cream Cheese (1 8oz. block)
Instructions:
Add chicken to crockpot, sprinkle with salt and pepper to your liking, pour in salsa, and cream cheese on top. You can cook this on high for about 3 1/2 hours or on low for 6-8 hours / until chicken is thoroughly cooked. Once the chicken is cooked, shred it with forks. I didn't want to do this in the crockpot so I removed them one piece at a time (be careful because they may be really tender) and placed in a mixing bowl. Once in the mixing bowl, shred the chicken with forks and place back into the crockpot. Mix everything together and serve!
This can be used in many forms - sandwiches, tacos, nachos, etc.
I originally found the recipe for this on Easy Chicken Recipes and modified it slightly to my liking. If I do soft tacos I top with shredded cheese and Old El Paso Zesty Ranch Sauce.
